Is there a way to select only the string content?

Answer 1. Menu option

"Edit | Select | Select [HTML] String" main menu option can be used to select the string at the cursor (without starting and ending quotes). This option will also work in non-HTML files.

Answer 2. Keyboard shortcut

The following steps can be used to assign the "Edit | Select | Select [HTML] String" main menu option to a keyboard shortcut such as "Ctrl+Shift+Alt+A".
  • Select "Tools | Customize | Customize Keyboard Shortcuts" from the main menu.
     
  • Click the "Add" button.
     
  • Press a key (such as "Ctrl+Shift+Alt+A") or pick a key from the drop-down menu under the "Shortcut Key" field.
     
  • Click the "Menu command" radio button.
     
  • Select "MSelectTagStrHTML" from the drop-down list.
     
  • Click the "Add" button.
     
  • Click the "OK" button to close the "Shortcut Key" dialog.
     
  • Click the "OK" button to close the "Keyboard Shortcuts" customization dialog.
Pressing "Ctrl+Shift+Alt+A" (or the assigned keyboard shortcut) will now invoke the "Edit | Select | Select [HTML] String" main menu option.

Answer 3. Related plugins

HTML-Kit provides several built-in options for selecting text and tags on the Edit menu. This plugin makes it possible to access these options using the Right Click Menu and the Actions Bar.
